This weekend my soul sista of 14 years is visiting me for some BFF time. It's Jennifer's first visit since I moved to Denver, and our first time seeing each other in nearly two years. Needless to say, it'll be fabulous to see her again. And, naturally, the occasion calls for a new Martinis and Marathons cocktail recipe!
Jennifer's leaving behind two little ones in Omaha, so she's in need of some R&R. She wants the weekend to be a kind of wellness retreat packed with healthy food, scenic hiking and retail therapy. Because, of course, we'll need some cocktails, I'm making her a "healthy" libation. This light and refreshing summer cooler is made with organic green juices and a quality gin. Though it has some booze in it, it's still packed with healthy vitamins and minerals. And, it's perfect for sipping in the sun while savoring each other's company.
Kiwi & Cucumber Summer Cooler Recipe
2 ounces of gin (I used Hendricks)
1 kiwi (peeled)
1 ounce of cucumber juice (about 2 inches of cucumber)
1/2 ounce of lime juice
1/2 ounce agave
1. Juice the cucumber
2. Juice and/or muddle the kiwi (I muddled half of it because the seeds add some extra flair to the drink)
3. Combine the gin, kiwi, cucumber, lime and agave in a cocktail shaker
4. Shake with ice and strain into a tall glass full of ice
5. Garnish with a lime or kiwi wedge
